A few hours after the main meal, once the speeches are done and the music is up, everyone is hungry again. A truck opening its hatch at that moment brings out hot food that is easy to hold, with no cutlery or sitting down needed.
We can be the whole night, from reception through to the late top up, or just the late shift if the dinner is already sorted. Either way the truck is self contained, with its own power and water, so it needs nothing from the venue at midnight.

Public or council land, like a park, reserve, street or footpath, needs approval first, and the approval usually sets the hours.
